    These muffins from miainmd are quite delicious but she said hers mounted nicely and mine were as flat as can be. Flatter than 13-year old Marilyn.

    I’ve already checked my baking powder and baking soda (new) for activation and both responded well. So that’s not it.

    This is just a SWAG, but it seems like the amount of baking powder/soda could be a bit low for the amount of flour and the weight of the other ingredients. Cream cheese and then putting the raspberry jam on top will need extra oomph to help with rising.

    Looks that way to me as well. So I thought it was a typo on the BP. When I looked up the recipe, they are called BUNS rather than muffins. Everything is the same so perhaps they really want to be made in larger format.

    Thanks ladies. I decided I didn’t want to risk another flop so I made banana bread…but in pie dish since that’s what I could find here. Does that make it banana pie? I’ve never cut a wedge of “bread.” Oh wait…yes I have….Irish soda bread is round and baked in a pie dish so I guess it’s still banana bread.

    (I haven’t slept much in the past 2 months as my writing indicates)
