I have a dear granddaughter who is a really good pastry type chef and a VERY precise recipe follower. She is pointing toward bio-engineering. I think this recipe and tutorial is exactly what would appeal to her and give her family wonderful croissants.
I got over my desire to make croissants about 50 years ago when I read and re-read Julia’s recipe. I really thought about it because I cooked out of her books for every dinner party–and family dinner. But NO!! LOL
