Shredded Carrot and Serrano Chili Salad

Just made this and it’s mighty tasty:
Cook’s Country Shredded Carrot and Serrano Chili Salad
1 lb.
carrots½ cup
peanuts1/3
chopped fresh mint1/3
cup chopped fresh cilantro¼ cup
thinly sliced scallions1 – 2 serrano
chilies, stemmed and sliced into thin rings1
Tbsp. fish sauce1
Tbsp. sugar1
Tbsp. toasted sesame oil2 tsp.
grated lime zest plus 3 Tbsp. lime juice1
garlic cloves, mincedSalt to
taste (1 tsp in recipe – they call for table salt)Shred carrots in food processor.
Mix everything together. Let sit 30 minutes prior to serving
