  • Slow Cooked Cranberry Beans

    I do not know where this recipe came from, there is no indication on my sheet of paper so am guessing it was a copy and paste from somewhere. Here is my adaptation of it and we really like this dish.

    1/2 lb. of Rancho Gordo Cranberry Beans

    3 cups chicken stock

    1/2 Tbs. evoo

    1 cup chopped onion

    5 cloves peeled garlic, diced, or to taste

    1 tsp chipotle powder

    1/2 tsp smoked Spanish Paprika

    1/2 Tbsp. Mexican Oregano

    2 pickled whole jalapeño peppers, sliced plus 2 Tbs. of the spicy brine

    1 14.5 oz can fire-roasted diced tomatoes with juices

    kosher salt to taste

    Juice of one lime

    I have a slow cooker in which the insert can be used on the stove. If you do not have this, sauté the onion and garlic in a separate pan. Add the beans, and chicken stock. The stock should cover the beans by one inch. Use more or less depending on the size of your cooking vessel. Cook on low heat for several hours, 4 to six hours. Check your beans to see how they are coming along. If they are getting dry, add a little more chicken stock. If they are almost cooked to your liking, add the rest of the ingredients, except for the lime juice, stir, put the lid on and continue to cook until beans are creamy and the skins are soft. Add the lime juice, salt,

    and pepper, and adjust seasonings, if needed. Rancho Gordo’s pineapple vinegar is excellent on beans, as well.

However, you can post this recipe at THE RECIPE SITE link and it will be there for as long as the site is. Also, you can add TAGS to your post (like CRANBERRY BEANS or RANCHO GORDO) which will help others find the recipe easier.

    Karen, I finally, in Canada, found some product by Rancho Gordo, probably Whole
    Foods. Not these beans though. I recall reading here, of the great love for RG. Do you think they are critical to the outcome?

    Marg, I am sure any cranberry bean would work. The reason I like Rancho Gordo is because every bean has a season in which it is available. When Rancho Gordo sells out of those beans, they are no longer available for sale. Their beans are very fresh when you get them and I think they are far superior to the grocery store types which are do doubt much older than the Rancho Gordo variates. I buy directly from Rancho Gordo, shipping is usually fast and they are well packed.

    Are you able now to ship into Canada? Rancho Gordo is in the area of Napa, CA

      Good to know. I think I will return to Whole Foods and see what kind they do have now. I could never order from the US though.

Now
