I thougth this would be fitting this time of the year, abundance of apples, cooler weather, and Oktoberfest right around the corner. Enjoy
Oompah-pah Sauerkraut
1 onion (yellow or white), chopped/diced
1/4 to 1/2 teaspoon of caraway seed
3/4 cup chicken broth
2 cups of sauerkraut
1 potato, peeled and grated/shredded
Saute onion, using cooking spray until translucent.
Add caraway seed, chicken broth, sauerkraut, and shredded potato.
Simmer for 30 to 40 minutes, stir often.
Continue to simmer up to 10 to 15 minutes longer.
Serve with:
Octoberfest Skillet
16oz pkg of kelbasa sliced in diagonal chunks
2 onions (white or yellow) quartered
2 apples (tart) pealed and sliced
1 green bell pepper sliced
2 TSP of butter
1/4 cup of brown sugar
Place sausage in skilled sprayed with cooking spray, heat until browned.
Add onion, appples, and green bell pepper, heat until tender.
Add butter and brown sugar, stir until mixture coats sausage and vegetables.
Enjoy
