3-minute dinner: fresh shrimp + Cedar's Mediterranean Chickpea Salad

Heat 1 TBL of olive oil in an 8" saute pan.

When hot, add 8-oz of deveined large shrimp.

Cook medium high for 1-2 minutes or until the bottom half of the shrimp have turned white. Flip shrimp and add an 8-oz container of Cedar's Mediterranean Foods "Chickpea Salad" found at Publix in the fresh-prepared hummus section.

Cook for 1 more minute, then turn it onto a warm platter. Serve with tabbouli, hummus and warm pita.

PS: I've also added half a container of Cedar's prepared tabbouli along with the chickpea salad. That was a good meal too.

PPS: Image is the Cedar's chickpea salad (includes edamame, olives, etc.) Imagine the grilled shrimp tossed in there and coated with the oil and herbs. Imagine our happy smiles.

Here's another 3 minute Chickpea salad recipe I created myself

Take as much of Spring Mix lettuces that you want, put in a bowl. Add either a small jar or large jar of marinated artichoke hearts (including juice). Add some sliced radishes and cucumbers. Add some garbanzo beans or a whole can, depending on the size salad you're making. Add some feta cheese. Toss. Delicious.
