A while back someone asked for my mom's tea cake recipe, she made them with pumpkin cream cheese

Anyway, here is the bite cake recipe. They are really delicious and perfect for the holidays.

I remember my mom having a tray of them handy during the holidays when unexpected people would drop by. She would decorate the frosted top with 3 silver dragees or would pipe a few holly berries in red butter cream and a holly leaf. Gorgeous! But they are also just as delicious with the frosting only.

Years ago, my mom was a member of the Carthay Women's Club, bridge and all that. Mrs. Glenn was a member too and they took turns bringing dainty sweets. This bite cake was so good that my mom scored the recipe.

Mrs. Glenn's Tea Cakes

Carthay Women's Club

1 c chopped nuts (walnuts are great)

1 c brown sugar, packed

pinch salt

1/2 c flour, sifted

1/4 t baking powder

2 large eggs, separated

Beat yolks and add all dry ingredients. Stir well (it will look crumbly). Beat egg whites until stiff and fild in. Fill lined mini muffin pan ~ half full. Bake 14 minutes at 400.

While warm, frost with:

Cream Cheese Frosting

1 8 oz softened cream cheese

1 c sifted powdered sugar

1 t vanilla

a few drops almond extract

Mix together, to make spreadable thin with a little milk.

These will keep a week or so, but I bet they won't!
