AngAk: New Mexico Pecan Bars

Being from New Mexico, I have special place in my heart for pecans. If you're ever in the Las Cruces area, take a drive through the pecan groves there. So beautiful.

New Mexico Pecan Bars

Base:

1 cup flour

1/3 cup firmly packed brown sugar

1/4 cup butter, softened

1/4 cup chopped pecans

1/4 tsp baking powder

Topping:

1/4 cup firmly packed brown sugar

2 tbls flour

1/2 tsp salt

3/4 cup corn syrup

1 tsp vanilla

2 eggs

3/4 cup chopped pecans (I usually use lots more)

Preheat oven to 350 degrees.

In a large bowl, combine first 5 ingredients, mix at low speed until crumbly. Press crumb mixture into ungreased 9x13 pan. Bake 10 to 12 minutes until light brown, remove from oven.

In same bowl, combine all topping ingredients except pecans. Beat at medium speed until well blended.

Pour over partially baked crust. Sprinkle with pecans. Bake 20 to 25 minutes until golden brown. Cool; cut into bars.

 
thanks! I wondered why they were called New Mexico--didn't know about the pecan groves in NM.

We have a Thanksgiving lunch here at work that is catered, but we usually bring some potluck dessert items. These bars will go much further than a pecan pie.
