Red Pepper Roll-Ups

Serves 2 dozen

1/4 tsp. freshly ground pepper

3 oz. goat cheese

6 oz. guacamole

7 oz. jar roasted sweet red pepper

4 soft taco large sized flour tortillas

Garnish: Fresh Basil

1. Drain roasted peppers and pat dry with paper towels, coarsely chop.

2. Spread tortilla evenly with cheese to within an inch of the border; spread guacamole evenly over cheese.

3. Sprinkle with chopped red pepper & ground pepper. Roll up, pressing edges to seal; cut each roll into 6 slices using a serrated knife.

4. Garnish with fresh basil springs, if desired.
