Cathy sent me the recipes and I've made two separate batches now. Of course the first time I didn't have dried garbanzos on hand and used canned as you explicitly said not to do. LOL I now know why!!! I have pictures that I'll post of the sorry little flat grease-soaked "canned" vs. the beautiful golden round crispy crusted "following the recipe" for superlative results that I'll post when I get a chance. It is amazing how little oil was absorbed into the falafel following your recipe vs. how terrifyingly much was absoved using canned garbanzos. Wow.
The falafels were absolutely heavenly. I hadn't had falafel since I lived in NYC and your recipe was exactly how I remembered them. The other recipes were so nice together as well. Loved the sumac in the Fatoush. My tahini was kind of wimpy and I kicked it up with some sesame oil and more garlic in the taratoor sauce and I loved those additions.
Oh, had to try something new and wanted to share. I pushed a whole cashew in some of the falafels as I was forming the balls and everyone really like that little surprise inside, and the taste of the cashew went really really well with the falafel.
