Try out this great recipe for Fresh Tomato and Basil soup that uses Florida Crystals organic sugar. Let me know what you think.
Garden Fresh Tomato and Basil Soup with Creamy Ricotta cheese
Ingredients:
1 Tbsp - olive oil
1 medium onion, diced
6 large tomatoes, washed, corded, seeded and diced
4 cups - chicken broth (fresh or canned)
1/3 cup - chopped fresh basil
1 Tbsp - Florida Crystals® Milled Cane Sugar
1 tsp - salt
¼ tsp - freshly ground pepper
½ tsp - lemon zest
1 cup - creamy ricotta cheese
Preparation:
Heat olive oil in medium saucepan. Add the onions and sauté until translucent, stirring occasionally, about 5 minutes. Add in the tomatoes, chicken broth, basil, sugar, salt and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes. Stir in the lemon zest and remove from the heat.
Transfer the soup to the bowl of a food processor or blender and pulse until mixture is slightly thickened, but still has a coarse texture. Ladle hot soup into bowls and top each portion with a dollop of creamy ricotta.
