Gretchen's Crab Cakes
1 lb. lump crab meat(in lean times I have used claw meat also)
1 small red bell pepper, finely minced
1 scallion finely minced or finely minced onion
1/4-cup to 1/2-cup finely crumbed Ritz crackers (croissant crumbs are really good also!)
1 egg
1/2-cup mayonnaise
dash of Worcestershire sauce
salt and freshly ground black pepper to taste
Mix everything but the crab. Gently fold in the crab. Form into cakes (3-inch diameter is a good size) and sauté in butter. Cook about 4 minutes per side until golden.
