I make them frequently at home
using Louis Rich chunk Lobster or Crab Delights, or salad shrimp (when I don't have the "real thing"). This lobster salad is also great served atop a mixed green salad.
Lobster Rolls - adapted from Ina Garten
Makes 2-3 large sandwiches
1/2 pound cooked fresh lobster meat, diced
4 Tbs high quality mayonnaise
4 Tbs finely chopped celery
1 tsp chopped capers
(I have also added lemon juice, red pepper sauce and finely chopped green onions, red peppers, hard boiled eggs and/or fresh dill)
4 Tbs melted butter (or more)
2-3 good quality plain, white hot dog buns (for proper Boston-flavor!)
Lettuce leaves (endive, romaine, butter, leaf)
Chop the lobster chunks into bite sized pieces. Mix with mayo, celery and capers. Refrigerate.
Heat griddle. Dip tops and insides of hot dog buns in melted butter and grill until all sides are lightly browned.
Serve immediately! Top grilled buns with lettuce leaves and a mound of lobster salad - we serve open-faced.
