Help, please. I'm making a "whatever's in the frig/freezer" dinner on Sat and it's all WHITE!

Here's what I've got so far (dinner for 4-5):

gnocchi with cream/cheese topping

sea scallops (not sure how to do those yet)

hummus

a block of feta (with pink peppercorns?)

asiago cheese bread

a tub of ricotta

a box of cannoli shells

In the frig I've got 3 roasted beets, a bulb of roasted garlic, a head of cabbage, a box of apples, flat-leaf parsley, and celery.

I've also got canned pumpkin puree, Einstein's pumpkin-spiced cream cheese, Mexicali sour cream, & homemade applesauce.

I NEED HELP...or possibly just a large box of Crayola crayons.

OR....I could hand out those old-fashioned 3-D glasses...then everything would be blue or red.

PS: This is a challenge for me to use "what I have" as I normally go crazy and buy, buy, buy too much stuff.

 
How about a twist on regualr cannoli

using the apples, ricotta and cannoli shells:

6 ready-made cannoli shells
1 lb fresh ricotta
4 T powdered sugar
1 t vanilla extract
finely grated zest of one lemon
1/2 tsp ground cinnamon
1 cup applesauce
2 T butterscotch morsels

Combine ricotta and sugar in a medium bowl; stir. Add vanilla, lemon zest, and cinnamon, and beat until smooth. Fold in remaining ingredients. Place mixture into a piping bag with a large nozzle (or a strong freezer bag with a corner cut off) and pipe into shells. (Substitute 3/4 cup of pumpkin puree for the applesauce?) Top with chopped apples.

Buy some pasta sauce and serve over the gnocci/garlic/parsley with a side of asiago cheese bread. Sea scallops - would they go with the gnocci?

Save the hummus and feta for a Middle Eastern brunch on Sunday. Yum, the Einstein's pumpkin-spiced cream cheese sounds very good on bagels!

You're on your own for the beets! With the celery, apples, and cabbage though, maybe incorporate them all into a salad?

Then sit back and enjoy your cleaned out refrigerator!

 
Do the sea scallops "persillade." Saute them in a very hot pan with the parsley and garlic added at

the end.

There, I've done green.

Serve the hummus with celery sticks.

Shed the cabbage and make a sort of fresh slaw thingie--top with roasted beets. There's a little red.

I was going to say use the ricotta to stuff the manicotti and break out a can of tomatoes for sauce, but I see now you have canolis. I'll keep thinking...

 
The only thing I can come up with is adding a tomato or a marinara sauce. Do you have that?

 
Oh, that sounds good Dawn.

put roasted garlic in the cream sauce for the gnocchi and sprinkle with parsley. make a vinegar slaw and top with those lovely beets. just "blacken" those scallops.
