I made them for the teachers that volunteered to work our Middle School event last Friday. The event begins at 5:30 and they don't really have time to go home after teaching all day and come back, so I try to provide something tasty for them.

They all had 'seconds' and took plates home for their spouses. I paired it with a big batch of Mexican Rice.

I added some finely chopped jalapenos to the filling and used canned green sauce (Las Palmas brand) along with corn tortillas.

I always feel confident with that recipe. I am also feeding the teachers at my son's school during conferences. I made Tomato Basil Bisque for soup day on Monday, and I volunteered to make Pineapple Salsa for the Taco Salad day today. I haven't made any for almost a year, I hope I remember how! (smile)
I am glad your family is safe, it appears to be a safe area, at least for now. I have family staying in La Mesa and in the Del Mar area, I think. Some staying with friends, some in hotels, and some in evacuation centers.
I will just be so glad when all of this is over. I have a perpetual stomach ache. The Cedar fire is still fresh in my mind. And after the fires are finally out, the air quality is so bad, and ash everywhere. Anyway, thanks for letting me know about the chix enchiladas!
