How interesting, noting that Paula used a rack and didn't specify the thin-sliced bacon. I wonder

if some of the reviewers who said the bacon was tough, etc didn't use bacon that was thin. I think I'll pass on trying them, but they sure do look tasty.

 
I so wanted to make this yesterday for our card crew...

but so many of them don't like blue cheese, that I decided to use Boursin instead. I hadn't read the recipe very thoroughly, so I screwed up on the alloted chilling time. I followed the recipe subbing Boursin, and since I didn't have the 2-inch ring molds, so I decided to put it in a bowl to serve with crackers. I added some green onions for color, and served it with crackers to make up for the lack of a crust. It was really good, and I would definitely make it again. I think I would use two packages of Boursin next time. I think I will sub some sort of savory crackers for the graham crackers. I am going to buy a couple mini springform pans to make this AND the stilton version for Xmas. Thanks for posting this Marg, I passed it on to some of my blue cheese lovin' friends.
