Orange Kiss-Me Cake

Recipe By :pillsbury Bake-Off Grand Prize Winner 1950

Serving Size : 12

***CAKE***

1 orange -- divided

1 cup raisins

1/3 cup walnuts

2 cups All-purpose flour -- or unbleached

1 cup sugar

1 teaspoon baking soda

1 teaspoon salt

1 cup milk

1/2 cup butter -- margarine or shortening, softened

2 eggs

***TOPPING***

Reserved 1/3 cup orange juice

1/3 cup sugar

1 teaspoon cinnamon

1/4 cup walnuts -- finely chopped

Heat oven to 350 F. Grease and flour 13x9-inch pan. Squeeze orange, reserving 1/3 cup juice for topping; remove seeds. In blender container, food processor bowl with metal blade or food mill, grind together orange peel and pulp, raisins and 1/3 cup walnuts; set aside.

Lightly spoon flour into measuring cup; level off.

In large bowl, combine flour and remaining cake ingredients at low speed until moistened; beat 3 minutes at medium speed.

Stir in orange-raisin mixture.

Pour batter into greased and floured pan.

Bake at 350 F. for 35 to 45 minutes or until toothpick inserted in center comes out clean.

Drizzle reserved 1/3 cup orange juice over warm cake in pan.

In small bowl, combine 1/3 cup sugar and cinnamon; mix well. Stir in 1/4 cup walnuts; sprinkle over cake. Cool completely.

 
I think the OLD Pills. Bake-Off winners were the very best. The more current recs typically use

box mixes or pre-prepared stuff like purchased pie crusts, etc. I had forgotten all about this Kiss-Me recipe that I have not tried yet either--a good-for-you cake since you are eating the fiber from the orange. (Or maybe not all that good for you since the sugar & butter would cancel that out! ha!)

Salted Peanut Chews

CRUST:
1 1/2 cups All-Purpose Flour
2/3 cup firmly packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter -- softened
1 teaspoon vanilla
2 egg yolks
3 cups miniature marshmallows
TOPPING:
2/3 cup corn syrup
1/4 cup butter
2 teaspoons vanilla
1 10-ounce package peanut butter chips
2 cups rice krispies®
2 cups salted peanuts


1. Heat oven to 350 F. Lightly spoon flour into measuring cup; level off. In large bowl, combine all crust ingredients except marshmallows; beat at low speed until crumbly. Press firmly in bottom of ungreased 13x9-inch pan.

2. Bake at 350 F. for 12 to 15 minutes or until light golden brown. Remove from oven; immediately sprinkle with marshmallows. Return to oven; bake an additional 1 to 2 minutes or until marshmallows just begin to puff. Cool while preparing topping.

3. In large saucepan, combine all topping ingredients except cereal and peanuts. Heat just until chips are melted and mixture is smooth, stirring constantly. Remove from heat; stir in cereal and peanuts. Immediately spoon warm topping over marshmallows; spread to cover. Refrigerate 45 minutes or until firm. Cut into bars.
