I have to make a sweet potato pie, what did your guests request?

REC: Sweet Potato Casserole which makes a great pie filling I'm told.

I've made this as a casserole for the last couple of years to raves.

Sweet Potato Casserole

Amount Measure Ingredient -- Preparation Method

4 large sweet potatoes -- unpeeled
4 fluid ounces grand marnier
3 tablespoons butter
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
3 tablespoons honey
dash salt
1 tablespoon orange zest
2 tablespoons crystallized ginger
1 cup miniature marshmallows

Boil 3-4 good-sized unpeeled sweet potatoes until they're tender. Drain. As soon as they're cool enough to handle, cut in half and scoop the flesh out into a food processor.

Add 3-4 oz Grand Marnier, 2-3 Tbsp butter, ¼ tsp cinnamon, ¼ tsp nutmeg, 1/4 tsp ground ginger, 3 Tbsp honey, a dash of salt, and process until light, fluffy, smooth, and mixed.

Turn into a casserole dish. Top with your choice of: marshmallow fluff, mini-marshmallows, or nothing. Bake at 425 until top is nicely browned. If the top is bare, drizzle with a mixture of 2 Tbsp apricot jelly and 2 Tbsp Grand Marnier heated in a saucepan. Grate some orange zest over top if you like.

Variations: It's a great sweet potato pie filling. Over in the chat, we've been talking about using hard cider or Calvados instead of Grand Marnier. And if you like ginger, a bit of powdered ginger and candied ginger is nice, too.

Spinach and sausage stuffing and pumpkin pie

I need to make 2 pies, one for general consumption and one just for my son.

 
I was just curious to what your guests requested. I haven't made a SPP in years, here's the recipe I

am using. If you have any better recipes, LEMME KNOW!

Ingredients
2 cups mashed sweet potatoes
1/4 pound butter, softened
2 eggs, separated
1 cup packed brown sugar
1/4 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup evaporated milk
1/4 cup white sugar
1 (9 inch) unbaked pie crust
Directions
Preheat oven to 400 degrees F (200 degrees C).
In a mixing bowl, combine the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Mix together well.
Beat egg whites until stiff peaks form; add 1/4 cup sugar and fold into sweet potato mixture.
Pour into pie shell and bake at 400 degrees F (200 degrees C) for 10 minutes. Reduce heat and bake at 350 degrees F (175 degrees C) for 30 minutes or until firm.

 
I love pecans chezz! I had to make chocolate custard, so my SPP won't clash with the sweet potatoes.

 
Pat, I did, and reported back a bit...

but this time, as usual, I will just toss stuff into the mixing bowl.
I use my own baked and mashed pumpkin, then add some molasses, brown sugar, spices (cinnamon, nutmeg, coriander, sometimes cardamom, maybe allspice)
evaporated milk, eggs, beat, fill crust, bake.
For the baking times and temps, I just check a cookbook for a standard PP recipe and follow those.

Oh, I missed the report. Love your wing-it filling and the molasses

sounds like a good addition. I think I'll try that.

 
Pecans are the best in everything (almost)! Love black walnuts, too, but can't find them anymore smileys/frown.gif
