Made these for "linner" yesterday and they were so good. I actually made Naked Momofuku Ginger Scallion Noodles because I didn't have any cauliflower or cucumber in the house, but really, who needs them! I ate them cold which was great but this could also be serve warm.

You could easily adapt this recipe for other toppings, or use them as a base for something else. So dang good!
