Don't know if I overbeat or what but the texture is different from what I expected. Very light. Looks beautiful when sliced and tastes just as good. I made 1 loaf and 2 mini loaves. The loaf took 45 min and the mini's about 35. It says to cool in pan 10 minutes but I'd do it longer next time- lost a corner of the large loaf.

I have found another recipe by Chef Douglas Rodriguez for Cranberry-Almond Poundcake, that contains almond paste and amaretto and I can't wait to try it. I am a big fan of anything with almond paste and the combination of the cranberries and almond paste sounds good to me.

When I make it I will let you know how the recipe is. I've got to pick up some almond paste this week and hope I can try it on Wednesday or Thursday. I definitely am in testing mode for Thanksgiving.
