ISO: ISO recipe for stuffed apples. I'm putting a class menu together called "Stuff It!"

that will feature 2 different stuffed mushrooms as an appetizer, a butterflied chicken stuffed under the skin with a ricotta mixture, served with a Provencal stuffed tomato, and I need a simple stuffed fruit dessert that is not too rich.

I suppose I could just core apples, fill with nuts and raisins and bake, huh?

Stuffed apples or pears w/ goat cheese or cream cheese or blue cheese, dried fruit, nuts, cinnamon..

 
I have one from Caprial Pence, "Walnut Stuffed Apples", that is wonderful.

Mascarpone, walnuts, cinnamon etc. I thought I had it in my MC but don't. If you're interested I'll type it up tomorrow morning. Just toooo whipped to do it right now.

 
REC: Stuffed Figs Drizzled with Chocolate - I just remembered this one - I posted it for several

people, and they loved it.

STUFFED FIGS DRIZZLED WITH CHOCOLATE

1/2 cup pine nuts, toasted
8 ounces cream cheese, softened
2 tablespoons grated orange zest
1/4 teaspoon fresh ground black pepper
1/4 teaspoon nutmeg
10 fresh figs, washed, stems removed
1/4 cup chocolate chips
1 tablespoon butter
1 tablespoon Grand Marnier (one reviewer used a little juice from the orange)
1 orange, sliced

1. In a small bowl, combine the cream cheese, cooled pine nuts, orange zest, nutmeg and pepper, mixing until smooth.

2. Slice each fig in half lengthwise.

3. Press about a tablespoon of the cream cheese mixture into the cut side of each fig half.

4. Melt chocolate and butter in micro 1 minute (or use double boiler); add Grand Marnier, stir till creamy.

5. Drizzle over stuffed figs.

6. Garnish on a platter with orange slices.

Walnut Stuffed Apples

Amount Measure Ingredient -- Preparation Method

1 cup walnuts -- toasted
1/4 cup mascarpone cheese
1/4 cup cream cheese
2/3 cup brown sugar
1/2 teaspoon vanilla extract
2 tablespoons dark rum
1 teaspoon cinnamon -- ground
1/2 teaspoon ginger -- ground
1/4 teaspoon nutmeg -- ground
1/4 teaspoon cloves -- ground
1/4 teaspoon allspice -- ground
4 whole Granny Smith apple

Place toasted walnuts in a food processor. Process to coursly chop the nuts. Add mascarpone cheese, cream cheese, brown sugar vanilla and rum. Process to mix. Add cinnamon, ginger, nutmeg, cloves and allspice. Process again to mix. Set aside in refrigerator until ready to use.
Preheat oven to 350. Slice about 1/4" from the tops of the apples. Remove the core. Scoop a bit of the apple out. Plug the bottom of the apple with the bottom of the core. Stuff each apple with a little over 1/3 cup of the walnut mixture. Place apples in a well greased shallow baking pan. Bake about 40 minutes, or until apples are fork tender. Serve warm

 
Thanks, everyone! This gives me so many options. I'll probably choose a non-cheese

recipe for this instance becuase there are cheese stuffings earlier on, but I will save the whole thread for future reference.
