This is one of the best brownie recipes I have tried. It's very basic, but good. My husband loves them.
4 oz unsweetened chocolate
3/4 cup (1 1/2 sticks) butter
2 cups sugar
3 eggs
1 tsp vanilla
1 cup flour
2 cups chopped pecans
Preheat oven to 350 degrees (325 for glass baking dish). Grease a 9x13 baking pan and line with waxed paper.
Microwave chocolate and butter in bowl on High for 2 minutes or until butter is melted. Stir until chocolate is completely melted. (I usually start the chocolate, then add the butter.)
Stir sugar into chocolate/butter mixture until well blended. Mix in eggs and vanilla. Sir in flour and nuts until well blended. Spread in pan.
Bake 30-35 minutes or until a toothpick inserted in the center comes out with fudgy crumbs. Do not overbake. Cool in pan; cut into squares.
Notes:
About the pan: I've never used the waxed paper and never had a problem getting these out of the pan.
About the chocolate: I've used any number of different chocolates: unsweetened, bittersweet, and semi-sweet. All good.
About the sugar: the last time I made these, I used organic sugar for the first time. The brownies seemed grainy to me--perhaps it wasn't the sugar, but it's something to consider.
