Almost ridiculously easy to make, this soup is based on a recipe from "S.O.U.P.S. - Seattle's Own Undeniably Perfect Soups" by Michael Congdon and is my absolute favorite soup. Although it is titled as "southwestern," this soup tastes very much like my favorite Indian dish of Chicken Korma, a mild, flavorful, non-spicy curry. I also use the soup as a baking sauce for chicken breasts, thighs, and cubed tofu - very tasty!http://www.finerkitchens.com/swap/forum1/37700

 
I can't say when, Julie, but I promise to try this sometime this season.

I actually have most of the ingredients on hand, including whole anchos and chipotles instead of powders.

 
Maybe I'll try this for my bookclub ladies next Friday. I'm doing a NY deli sandwich supper

with corned beef on marble rye and turkey on white and cole slaw and chips and pickles and cranberry chutney. Thought I should add something warm, and maybe this soup would be warming and very seasonal to serve---not so much NY deli, but I could pretend to be the soup nazi from Seinfeld. My book was an old Lawrence Sanders series, The Timothy Files, based in NYC.
