Made these tonight - Italian Stuffed Peppers (Vegetarian)

I made these with a side of orzo and we enjoyed them. Off the cuff, so all measurements are approximate.

Italian Stuffed Peppers

Makes 4 pepper halves

Ingredients

2 tbsp olive oil

2 orange peppers

1/2 red onion, chopped

1 red pepper, chopped

4 oz. mushrooms, chopped

2 cloves garlic, minced

1/2 cup basil, shredded

1/2 tsp. salt

1/4 tsp. pepper

1/2 cup breadcrumbs (used pepperidge farm white)

1/4 cup shredded parmesan cheese

1-1/2 cups marinara sauce (I was lazy tonight, so I didn't make my own but used Paul Newman's)

scant 1 cup mozzarella

Directions

Preheat oven to 350 F. Spray baking pan with non-stick spray.

Core, halve, and seed two orange peppers for stuffing. Reserve.

Heat 2 tbsp. olive oil in pan over med-high heat. Add onion and saute until nearly translucent. Add red pepper & saute approx. 2 minutes more. Add mushroom and garlic and saute and additional 2 minutes. Add salt, pepper, and basil, saute briefly, just to combine elements. Remove from heat.

Combine sauteed vegetables, parmesan and breadcrumbs. Stuff peppers with mixture. Bake in prepared pan approx. 20-25 minutes.

Meanwhile, heat marinara sauce over low heat until warm.

When peppers are done, remove from oven, top with generous 1/3 cup of marinara sauce & sprinkle with approx. 2 tbsp. mozzarella.

Put under broiler until cheese is melted & slightly browned.

 
nice veg side dish. it could be made in the crock pot in this hot weather, then broiled to finish
