MOM'S SATURDAY NIGHT TUNA MELT

(makes 4 large sandwiches)

When Mom made these in the 1950s and early 1960s my sisters and I loved them! Mom would make a bunch and freeze them in aluminum foil. We'd pop them in the oven for a hot lunch treat in the winter. Add a bowl of soup and you have a terrific dinner. I updated some of the ingredients to the 2000s.

2 Cans (6-1/4 oz each) water pack tuna, drained and flaked

2 chopped stalks celery

1 chopped onion

1/2 C cubed American or cheddar cheese

1/2 C cubed pepper jack cheese

1 T Beau Monde seasoning or 1 tsp celery seed

1 tsp garlic powder

1 tsp pepper

1 tsp paprika

2 T sweet pickle relish (optional)

1-1/2 C Miracle Whip or mayonnaise (if you are from Minnesota it must be Miracle Whip!)

Mix together. Cut a French Baguette into 4 equal pieces. Slice each piece almost in half horizontally. Tear 4-16" square pieces of aluminum foil and place bread in center of each. Spoon tuna mix into bread and gather foil around each sandwich leaving the top open 1". Put "bundles" in a baking pan and bake in a preheated 350° oven for 15 minutes or until cheese melts.
