This year for a variety of reasons I decided not to do a turkey which resulted in a more relaxed Christmas morning and considerably less stress. My two sister in laws who were going to be partaking were assigned dishes to prepare. One brought Thai Chicken Coconut Soup while the other did a mash of carrots and parsnips.
Our main course was Roast Beef Tenderloin with Port Sauce. I salted the meat as suggested in the recipe and it turned out beautifully.
