Pumpkin Drop Cookies

PUMPKIN DROP COOKIES

Cooking Time:

Bake 12 to 15 Minutes

Ingredients:

2 cups

C&H Pure Cane Dark Brown Sugar, packed

1 can

pumpkin, canned 16 oz or 2 cups cooked pumpkin

1 cup

oil , vegetable

2 tsp.

Vanilla

4 cups

flour, all-purpose

2 tsp.

powder, baking

2 tsp.

soda, baking

1 tsp.

Salt

1 tsp.

cinnamon, ground

1 tsp.

nutmeg, ground

1/2 tsp.

Ginger

2 cups

Raisins

1 cup

nuts, chopped

Instructions:

Preheat oven to 350°° F. Grease cookie sheet. With electric mixer, beat sugar, pumpkin, oil and vanilla in large bowl until blended. Combine flour, baking powder, soda, salt and spices; stir into sugar mixture. Stir in raisins and nuts. Drop by teaspoonfuls 2 inches apart onto cookie sheets. Bake 12 to 15 minutes until set. Remove to a rack to cool.

I wanted to introduce myself. I'm from sunny California and I love food, baking, and reading. I like spicy things, but have a major soft spot for sweets! smileys/smile.gif

 
Easy and good ones are lime meltaways, snickerdoodles, molasses drop

cookies, and spritz (well those aren't easy, but they're very good and worth the effort). I think I've posted them here before, but if you need recipes I can post them again.

It's a great group... lots of info and heart.
