These were a little too sweet for me right out of the oven, (I cut the salt in half, so that probably affected it), but after storing overnight, the sweetness mellowed. Out of the oven, they had crispy edges and chewy centers. After being stored in an airtight container overnight, they became chewy all the way through.

ADDICTIVE CHOCOLATE CHIP COOKIES

INGREDIENTS:

2 cups all purpose flour

½ cup quick cooking oats

1 tsp baking soda

1 tsp salt (I used 1/2 tsp)

1 cup unsalted butter, softened

¾ cup white sugar

¾ cup brown sugar

2 tsp vanilla extract

1 egg

1 cup chocolate chips (I used 1 cup plus 2-4 Tbsp Ghirardelli semi-sweet chips)

DIRECTIONS:

Preheat oven to 350F and line a few baking sheets with parchment paper.

In a medium bowl, whisk together flour, oats, baking soda and salt.

In a large bowl, cream together butter and sugars. Blend in vanilla extract and egg. Slowly add in the flour mixture until nearly combined. Add in chocolate chips and stir until dough is uniform in color and chip distribution.

Drop by rounded tablespoonfuls onto prepared baking sheets.

Bake at 350F for 11-13 minutes, until lightly browned. (I baked 12 minutes). Remove to a wire rack to cool.

Makes 40 cookies. (made about 42)
