RECIPE: Rec: Creamed Caraway and Dill Pumpkin (side dish for roasted meats)

2,5 kg Pumpkin

1 onion

4 cloves of garlic

75 g Butter

Salt, pepper, sweet-Paprika

2 tsp. caraway seeds

100 g Tomato paste

1/2 cup hot chicken stock

200 g saure cream

50 g flour

1 bunch of fresh Dill

1-2 tsp. cider vinegar

Peel and cube pumpkin; chop onions and garlic.

Saute pumpkin, garlic, and onion in butter until onions are soft.

Add salt, pepper, paprika, caraway. Stir the tomato paste into the hot stock and pour over vegetables. Stir. Cover. Simmer for 15 minutes.

Stir sour cream and flour together. Stir into the simmering pumpkin. Simmer for 5 more minutes.

Clean and chop the dill. Stir into the pumpkin.

Adjust seasonings of salt and pepper and stir in vinegar.

Nice side dish for a roast.
