I made this salad to go with some Meat Pinwheel sandwiches(http://mennonitegirlscancook.blogspot.com/2008/06/meat-pinwheels.html) for lunch yesterday at work. this is my adaptation, the original recipe is at the link. It was a really nice variation on a black bean salad with the orange in it instead of lime.

Black Bean and Rice Salad

INGREDIENTS

2 cups drained canned black beans(1 can)

3 cups cooked brown rice

2 celery stalks, finely chopped

1 small can corn

1/2 cup chopped scallions

DRESSING

1 tsp ground coriander

1 tsp ground cumin

1 small bunch chopped fresh cilantro, more or less to taste

1/4 cup orange juice (1/2 fresh orange, squeezed)

2 tbsp rice vinegar

1 clove garlic, minced

3 tbsp olive oil

1 tsp grated orange peel

1 tsp Sriracha hot sauce

and salt and pepper to taste

1/2 cup chopped toasted walnuts and cilantro or parsley leaves to decorate(I had no walnuts, but it would be a nice addition)

Combine the drained beans with the rice, celery, onions and corn. In a small bowl, whisk together all the dressing ingredients, then pour over the beans and rice mixture. Stir thoroughly. top with roasted walnuts and cilantro or parsley before serving.

for the sandwich pinwheels, I just used the biscuit dough recipe(made in the food processor) and made my own filling using seasoned ground turkey and spicy sausage and layered it with spinach leaves and some shredded cheese. chill the dough after pressing it out but before rolling it up to make the rolling up easier(I pressed it out on parchment). Also, chill it again before slicing and it behaves much better. these were really fun to make and would make a fun picnic lunch or holiday decorating snack since they are not too sloppy.
