New Cuban Sandwich

Amount Measure Ingredient -- Preparation Method

2 Teaspoons Olive Oil2 Medium Onions -- sliced thin

1 Clove Garlic -- minced

1/2 Teaspoon Oregano

1/4 Teaspoon Cumin

1/2 Bay Leaf

1/2 Lime -- juiced

2 Tablespoons White Wine

Salt And Pepper -- to taste

1/4 Cup Low Fat Mayonnaise

1/4 Teaspoon Mustard

2 Loaves French Bread Loaf -- sliced lenthwise

1/2 Pound Smoked Turkey Breasts -- sliced thin

1/4 Pound Swiss Cheese, Lowfat -- sliced thin

Set oven to 350°. Heat oil in a non-stick skillet over medium-low heat. Add onion and cook, covered and stirring occasionally, 10 minutes or untik it's almost soft. Stir in garlic, oregano, cumin, and bay leaf. Continue cooking until onion is soft but not brown. Stir in lime juice, wine, salt and pepper. Cover skillet and remove from heat.

Combine mayonnaise and mustard and spread the mixture on inside of each loaf. Pile half the turkey onto one side of each loaf, then the onion mixture (discard the bay leaf), then the cheese. Close the loaves, tucking in the turkey and the cheese. Press the sandwiches firmly to partially flatten them. Place sandwiches on a baking sheet and cover with a heavy roasting pan or other object. Press again. Bake weighted down, for 10 minutes or until the cheese melts. Cut each loaf into quarters and serve immediately, 2 quarters for each person.
