Celery with Anchovies

Pour a thin puddle of your best extra-virgin olive oil onto a rimmed soup plate or salad plate. Arrange 1 thinly sliced celery rib in a single layer in the oil. Garnish with freshly cracked black pepper, coarse sea salt, 2 anchovy fillets, nicoise olives, and celery leaves. Serves 1.

Celery with Blue Cheese

Cut 4 trimmed celery ribs crosswise into 1/2-inch pieces, transfer to a bowl, add 2 oz crumbled Maytag or other good blue cheese, 1 tbsp extra virgin olive oil, a little salt and pepper. Gently toss, and serve well chilled. Serves 2.

Apple and Celery Salad

Whisk together 2/3 cup mayo, 2 tbsp chopped fresh cilantro, 2 tbsp lemon juice, salt and pepper. Cut 5 celery ribs and 3 crisp red apples into 1-1/2-inch-long julienne strips (or, what the heck, just chop them). Toss everything together. Serves 6.

I have made the celery and blue cheese salad before and really liked it. The other two sound delicious also, especially the one with the anchovies. I will never look at celery the same way again. Thanks for posting these!
