Turkey Enchilada Soup

1 Turkey carcass made into broth and turkey picked off and reserved.

Sautee 1 large onion, chopped, 1-2 ribs celery, chopped, 1 clove minced garlic. Add to broth along with one 28 oz canned diced or whole squished or fresh tomatoes, 1 cup (or more)red enchilada sauce (I use mild), 1 tsp oregano & 1/4 tsp dried chipotle pepper flakes. Simmer until veg are done ~ 20 minutes after the broth returns to the boil. Add 10 oz frozen corn, can run these under the faucet in a colander. Sprinkle 2 Tb corn meal (or masa) over broth and stir in. Add back the turkey meat. You can add a can of black beans (or whatever kind you want). Heat thoroughly. Serve with crumbled tortilla chips over and sour crema garnished with a few sprigs of fresh cilantro. Other garnishes--grated sharp cheddar cheese, chopped red onion. AND avocado slices!

Obviously you can sub out any ingredients that are even close to what I gave, I do when I don't have something here.

 
Oh and you can add any leftover turkey that you have as well. I didn't have enough corn

this time so it seemed a little short on "goodies" but I just didn't want to have to make another trip to the market. Trying to recover from Thanksgiving grocery shopping...

 
Luisa, this was GREAT.

I think it will be even better tomorrow when all the flavors have blended. Turned out I had green enchilada sauce, so I used that instead of red. I also used cream cheese instead of sour cream. It was great with the tortilla chips.
