Cinnamon Poundcake with Apples and Honey

"This cake is also tasty just dusted with confectioners' sugar."

3 cups flour

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup butter

1-1/2 cups sugar

4 large eggs

2-1/2 teaspoons vanilla

1 cup buttermilk

1/3 cup brown sugar

2 tablespoons ground cinnamon

1 package (16 oz.) confectioners' sugar

1/3 cup honey

4 cups sliced apples, candied walnuts and raisins

Preheat oven to 350 Degrees F. Grease 12-cup Bundt pan.

Mix first four ingredients. On medium, beat butter with sugar 2 minutes. Beat in eggs and 2 teaspoons vanilla. Alternately beat in flour mixture and buttermilk. Remove 1-1/2 cups batter; stir in brown sugar and cinnamon. Pour remaining batter into pan; spoon brown sugar batter into pan; swirl.

Bake 55 minutes or until pick inserted comes out clean. Cool in pan 10 minutes. Remove to rack;

cool.

On medium heat, beat confectioners' sugar, 1/4 cup honey, 2-3 tablespoons water and remaining vanilla. Spoon over cake. Toss apples, walnuts, raisins and remaining honey.

In the photo of the cake the fruit is placed in the center of the Bundt Ring when served.
