WINTER FRUIT CRISP
Dried fruits bolster winter's store of
apples and pears for a dessert that begs
second helpings. If dried cherries or
cranberries are available, they make a
colourful and tangy addition.
6 large apples (preferably Golden Delicious)
3 pears (preferably Bosc)
1/2 cup halved dried apricots
1/2 cup halved prunes or dates
1/2 cup raisins or currants
3 Tbsp. lemon juice
2 Tbsp. packed brown sugar
2 Tbsp. butter, cut into bits
TOPPING:
3/4 cup all purpose flour
1/2 cup packed brown sugar
1 Tbsp. cinnamon
1/2 cup butter
1/2 cup EACH rolled oats and chopped walnuts
Peel, core and slice apples and pears. In
large bowl, toss together apples, pears,
apricots, prunes and raisins. Sprinkle with
lemon juice, sugar and butter; toss again.
Transfer to greased 13 x 9 - inch baking
dish, leveling top.
TOPPING: In bowl, combine flour, sugar and
cinnamon; with pastry blender or two knives,
cut in butter until crumbly. Stir in oats
and walnuts; sprinkle over fruit.
Bake in 375 F. oven for 1 hour or until
apples are tender. Makes 12 servings.
