rvb, after an exhaustive search for fresh cranberries, I made your chutney recipe

The third one in the post from the Lighthouse restaurant. It is lovely, but I found it a bit too tart so I added another 1/4 cup of white sugar. The recipe gives 1/2 cup measurement of water in the ingredient list, but in the directions it gives 2 cups water. I used the 2 cups water and it turned out really nice. I think it would have been very thick and glue-y with just 1/2 cup water. Anyway, I wanted to serve it with smoked turkey sandwiches for my bookclub night in 2 weeks and had no idea that finding fresh cranberries would be almost impossible in September up here. Our leaves have turned and there's snow on the mountains for cryin' out loud---it's definitely autumn and the cranberries should be here already. The last store I tried told me "oh, we expect them today". The grocer actually checked back twice and found me in the store and handed me 2 bags(what's with the 12oz bags? most recipes call for 1 lb grrr). That was so nice of him. I told the mgt how much I appreciated the service. So now I have my chutney for the evening and 5 jars to give as gifts. I think next time I will add a bit of Gran Marnier or spiced rum, just for fun!http://www.finerkitchens.com/swap/forum/index.php?action=display&forumid=1&msgid=22402

the original recipe calls for 1/2 cup. i've...

never had any problems. it's thick, but not so much as jelly.

i like your idea about the gran marnier or spiced rum.
