Can I make ahead and freeze pecan tassies and mini pumpkin pies? If so, would it be best to bake them first, cool and then freeze or make them, freeze them and them bake them the day of the event?

 
I think you'd do much better baking them ahead, cool, wrap well and freeze. Thaw in their wrappers

Cookies freeze and thaw beautifully. You may have problems if you freeze the pies before cooking... soggy crust and such.

 
Hmm, I was going to suggest the opposite, but your idea makes sense. The woman that sold me the

apple pie at the election day pie sale asked me "Do you want it cooked or frozen?" I looked at her for a second, then asked "Are the frozen ones cooked?" She said no, because people like to take them and bake them the night before they need them (such as for Thanksgiving).

So they sell them to people and bake them after they've thawed. But I'm not sure I would take advice from her... remember the raw bottom crust. And that was baked - not sure if it was pre-frozen or not but I don't think so. I don't know what to tell you :eek:)
