THREE C BREAD
Great for Holiday:Eating & Gift giving

3 beaten eggs 1 tsp cinnamon
1/2 cup milk 1/2 tsp salt
2 1/2 cup sifted, all purpose flour
1 cup sugar
2 c shredded carrot
1 tsp baking powder
1 3 1/2 can flaked coconut (1 1/3 cups)
1 tsp baking soda
1/2 c snipped maraschino cherrie
1/2 cup raisins
1/2 c chpped pecans
1/2 cup veg oil
Combine beaten eggs, oil, and milk. In lg bowl, sift together flour sugar, baking powder,
soda, cinnamon and salt. Add egg mixture. mix just til thoroughly combined. Stir in
carrots, coconut, cherries, raisins, and pecans. Turn into 4 well-greased and floured
16 oz fruit or veggie cans. Bake in 350 oven for 45 - 50 minutes.. Remove from cans & cool
thoroughly. Wrap & refrigerate overnight or till used. Makes 4 small loaves.
Note: To make one large loaf, baike in 9X5X3 loaf pan for 55 - 60 minutes.
This is delicious with a cuppa... toasted and spread with butter or cream cheese.. as an alternative to cake or cookies!
