Wanted something different but easy for dinner. Checked out Epicurious and came up with this recipe which got a thumbs up from Ian.
I added diced potatoes to the mixture which were nicely flavoured by the garlic, thyme and oil mix. Also, I roasted the dish at 370 F for 45 minutes and then increased the temp. to 400 F for the last 10 minutes.
