Two easy desserts to go with the Chocolate Pate above

For one of my New Year's Eve parties several years ago I served three desserts that were easy to do in a small condo kitchen. One was the Chocolate Pate with Raspberry Sauce posted above at 17007 and these two.

NO BAKE LEMON CHEESECAKE

1 Envelope Sugar Free Lemon Flavored Gelatin

1 Cup Boiling Water

3 Tablespoons Fresh Lemon Juice

1 7 1/3 OZ Package Cream Cheese

1/2 Cup Sugar

1 Teaspoon Vanilla Extract

1 12 OZ can Evaporated Skim Milk

3 Tablespoons Graham Cracker Crumbs

In a bowl combine the gelatin and water. Stir

until dissolved. Stir in Lemon Juice and cool.

In a blender, place the next 4 ingredients, with

the gelatin mixture and puree until smooth and

well blended. Pour into a 12 x 8 baking dish

and refrigerate for 4 hours until set.

Sprinkle with the graham cracker crumbs.

Mocha Walnut Pie

1 - 9 inch unbaked pie shell

2 (1 ounce) squares unsweetened chocolate

1/4 cup butter or margarine

1 tablespoon instant coffee dissolved in 1/4 cup hot water

1 (14 ounce) can sweetened condensed milk

2 eggs, well beaten

1 teaspoon vanilla extract

1 cup walnuts

1 Preheat oven to 350 degrees F (175 degrees C).

2 In medium saucepan, melt chocolate and butter or margarine over low heat. Stir in coffee, sweetened condensed milk, eggs, and vanilla. Mix well. Pour filling into pastry shell. Top with walnuts.

3 Bake for 40 to 45 minutes, or until center is set. Cool.

Makes 1 9-inch pie

 
I've had the lemon dessert and it is very nice. For my second dessert I'm going to make

an eggnog creme caramel. It can be made a day or two in advance which is a bonus. Your lemon dessert will find its way to our table soon though.
