Yukon Gold Baked Potato Pancakes

these are great and easy too. they are good with any meal. i usually serve this with a green or fruit salad along with home-made applesauce.

6 Yukon Gold potatoes

2 eggs

2 T flour

1-2 large cloves garlic grated or pressed

1 T grated onion

2 t salt

lots of freshly ground pepper

1 1/4 Cups milk

3 T butter, melted

sour cream and minced parsley for garnish

applesauce (optional)

preheat oven to 350 F. butter a large pie or quiche pan

peel (i don't bother} potatoes and grate on a medium holed grater. add all remaining ingredients except butter, sour cream and parsley

mix well using your hands and pour into prepared pan.

drizzle with melted butter and bake for 1 hour.

serve immdiately with sour cream parsley and applesauce, if using on the side.

this is supposed to serve 6

Last time I purchased Yukons they were $6 for 3 pounds.

Is this par for other neighborhoods? I was shocked, especially when I got home and realized it was only 3 pounds!!! I filled out the recipe (german potato salad) with red potatoes.

 
i don't know how much i paid for them but not THAT much....

go ahead and sub red potatoes as this recipe is too good not to make. you may want to peel them for appearance sake though

post, click on the edit and then finish off the recipe? That way it's all together. And I don't see the amount of potatoes in the recipe. Thanks. By the way, you're the only one who can edit the post.
