Our town has a Mexican food truck which sells tacos for $3.25 or 3/$10. Ya, I don't get the math either.
I opt for a single 4" flour tortilla, carne asada and cooked onions. It comes with a side of tomatillo sauce.
Our town also has a good lunch spot with sandwiches/salads and a few daily specials. Wednesday's special was two 4" flour tortillas (aka Street Tacos) for $12, with one 1/2 C side such as beans or rice or chips.
I didn't eat at either spot. Instead, since it was 5% Senior Citizen discount Day at Publix (losing definition of my jawline finally came in handy) I purchased thin-sliced pork chops that were not only on sale for $2/pound, but were also BOGO. I ended up with 2 pounds of thin pork for $2.
I had a package of ready-to-use Barbacoa crock pot mix so I added the pork chops and sauce and let the crock pot do its thing for 2 hours. The recipe on the package says 5 hours on high or 10 on low, but they were assuming a 2" thick slab of beef. This only took two hours and the meat was done.
At some point I added chunks of potato because the sauce was tasty and I'm Ukrainian and Polish and we do stuff like that. I'm not crazy about meat, but a blood donation was coming up, so needs must.
Today, I shredded the meat to simplify warming it up, added some of the reserved sauce and layered on a bunch of things:
