Rose Levy Beranbaum uses cassava starch (or ground tapioca) in one of her cookies and raves that it makes it very tender. From what I've researched, cassava starch and tapioca starch are described interchangeably.
I have tapioca starch (for ice cream) but have no clue even where to buy cassava flour. And I'd rather not buy it to just try one cookie recipe. But I also don't want to waste ingredients by using the tapioca if it isn't the same.
