Looking around that site seems to be all keto and no sugar type recipes with lots of things I hadn’t heard of before like you saw.I think the small amount of chocolate would balance the acidity of the vinegar and thicken it so it didn’t run.
Also, I’ve never heard of
Allulose Sweetener, Zero Calorie Granulated Sugar
But I HAVE used Theo’s chocolate recipe book. It was the saving grace that turned my former caramel disasters into caramel happiness.
