Untried but considering: Pimento Cheese Featherbed Eggs

so...here's the rub: I don't like pimentos; I don't like pimento cheese; I don't like corn bread (at least not this local puritanical version with no sugar & no butter).

But I do have a dear 84-year old Charleston-born neighbor with cancer.

I'd like to make this for him, but truly have no concept what it will end up like. It is, provisionally, a strata or bread pudding, which is always nice. And a cheesy one, which makes it even nicer. I just can't get around the pimentos and cornbread...those are just putting the brakes on for me. In addition, his favorite food is pimento cheese, so I was going to give him some of that too.

I don't enjoy giving people food that I wouldn't eat myself. And it would take a lot for me to enjoy this. (I am also not a cornbread & sausage stuffing gal. Nope)

So should I put my ick-factor on hold and do it for him regardless of my own feelings about these ingredients?

Until I read that the cornbread dried out, yick was predominant in my reaction as well. The Dijon and Worcester.... icked as well. But I think the pimiento will take care of both concerns. But I like cornbread. Lots. Is he a fellow that is fond of big flavours?

I think he will be pleased with the effort of pimientos. Let's do it and report his reactions.

I think you've got yourself a pimento cheese & cornbread pudding that too me, sounds delish. But I adore cornbread. If the ick factor isn't too great for you it's a lovely gesture.

Do you like biscuits? (I adore those too). Because there are several pimento cheese biscuit recipes on the web. I'm sure those would be appreciated just as much.

I too love cornbread, but the sweet kind. The other kind seems more like cardboard and I don’t understand the reasoning for liking it more. Unless, it’s a base for something else so sweetness isn’t required - I suppose.

I’m with you the combo sounds yuck, but pimento wasn’t part of my Texas mother’s (or my) repertoire. I don’t know where that recipe came from, but if I was looking to please somebody from Charleston, I probably look at Paula Deen recipes. She likely has something with pimento.

The guys at my local tire store had fixed a nail in my tire and didn't charge me, saying they were grateful to someone who treated them with as many goodies as I did. I asked what would they like in appreciation and they requested "ooey gooey lemon cake." One google search later, I had Paula Deen's recipe.

I made it after the hurricane passed and when delivering it, gave them this note and asked them to absolve me from future lawsuits:

I am going to have to find the recipe for corn light bread. I had never heard of it until I moved to Tennessee. The closest thing I can describe it as is a poundcake made with cornmeal. It is baked in a loaf pan and it's dense, moist, and sweet. It is served with pulled pork. I don't like sugar in my cornbread but I love corn light bread.
