from "Meat Pies" by Brian Polcyn and Michael Ruhlman
2 pounds russet potatoes
2 TBL unsalted butter
2 large leeks (about 1 lb), halved lengthwise, cleaned and cut into 1/4" slices
1 C heavy cream
Blind-baked pie crust (9 or 10")
3 oz Gruyere, grated
2 oz Parmesan, grated
Cook unpeeled potatoes until they can be pierced. Cool until you can handle them
Cut peeled potatoes into 1/4" slices
Saute leeks in butter, cover and cook for 5 minutes. Uncover, add heavy cream, bring to boil, then lower and cook 5 minutes (until thick and creamy)
Preheat oven to 350.
Spread leeks on bottom of pie crust, shingle the potatoes over that and then top with the cheese.
Bake until top is browned, about 30 minutes. Allow to cool 15 minutes before cutting.
Marilyn's Notes:
My potatoes were HUGE. I mean, they were 1 pound each. Try to find small russets and the cook time will be seriously reduced.
I have no idea how much of the leek they used, but I stopped where it starts to go green, so I needed 3 leeks.
