This is such a good process. Doused with olive oil, dried oregano, a few sprigs of fresh thyme and rosemary, kosher salt, and roasted in a 425º F oven. I took it out and tossed the veggies 2 or 3 times.
Man o' man, is it good! Crumbled a little feta cheese to stir in, and used a big spoon to scoop up the juices—such good food.
