Given this is a weeknight dinner I’m dropping at neighbors, I not sure about if the corn makes an ok side v traditional beans. I’m not sure if they eat beans, but I got the corn dish from the mom, so know they like it (and I’ve eaten just from a bowl w a fork). Would you change anything?

I can't wait to try this corn salsa recipe and hope we have some good home grown corn this year. My husband is trying to grow corn again since the neighbor's former roommate left his huge garden in tact - fencing, etc. Our plot is too small and too shaded. He spent a good bit of time cleaning that old garden up but I think he has planted 400-600 seeds so far with probably another 300 that he may or may not plant.
