Thanks Meryl - I watched the videos (half of them don't work) and I think Thomas Keller's
looked the best - although his plugging the Viking oven was too funny. Anne Burrell's herb paste treatment looked good, too. I don't eat the skin so I like how she pushed all the herbs under the skin.
Heston Blumenthal's brine-blanche-chill-blanche-chill-dry-roast method looked interesting but a lot of work (part 2 is not available). The blanche-drying method works well for duck.
Is that Persian subtitles for Martha?!
