16 Bean Chili Soup My own Creation

Thought I would share a soup I made this morn...

Goya sells a pkg of 16 beans.

I soaked 1/2 the pkg in 4c cold water overnight.

1 lg sweet onion chopped

3 cloves garlic minced

1 stalk celery chopped

1/2 lg bulb fennel chopped

pancetta diced or bacon (I used pancetta)

saute in olive oil

add

1t Ancho Chili powder

1/2t Spicy Chili powder

(chili powder to taste)

salt/pepper

stir 1 min

add 1T tomato paste

stir 1 min

add beans

4-4 1/2c water and or mix vege or chicken broth(I used water)

bring to simmer

cook until beans are tender (I cooked in covered pot)

puree 1/2 (I used hand stick blender)

The soup came out thick and delicious.

 
Sounds delicious Suz. Don't you love it when wing-it soups turn out well? Have been making alot of

wing-it soups myself the past few weeks. So fun.

 
This has been a soup craze winter and wing-it soup is fun...

btw I like that expression wing-it soup!
